Ingredients:
1/2 Yellow Onion (cut into large chunks)
1 Zucchini (large, sliced in half moons)
1 1/2 tsps Avocado Oil (divided)
Sea Salt & Black Pepper (to taste)
10 ozs Salmon Fillet (skinless, cut into large cubes)
1 tsp Cajun Seasoning
Directions:
1. Preheat the air fryer to 400ºF (205ºC).
2. In a bowl toss together the onion, zucchini, half the oil, salt, and pepper. Transfer into the air fryer basket. Arrange in an even layer and bake for six to seven minutes, shaking halfway through. Remove and set aside.
3. Place the salmon in the same bowl and toss with the remaining oil and cajun seasoning. Transfer to the air fryer and bake for five to six minutes, or until cooked through.
4. Divide the salmon and veggies onto plates and enjoy!
Notes:
Leftovers: Refrigerate in an airtight container for up to two days.
Serving Size: One serving is about 1 1/2 cups.
