Chicken & Cauliflower Rice Soup


A comforting bowl of Chicken & Cauliflower Rice Soup, ready to warm up any day. This nourishing soup not only delights the palate but also boasts anti-inflammatory properties, making it a healthy choice for any meal.

Ingredients:

  • 8 ozs Chicken Breast (boneless, skinless)

  • 1 Yellow Onion (medium, diced)

  • 1 Carrot (medium, diced)

  • 1 stalk Celery (medium, diced)

  • 1 Garlic (clove, minced)

  • 1 tsp Ginger (fresh, minced)

  • 1 1/16 quarts Bone Broth

  • 1 cup Cauliflower Rice

  • 1/2 tsp Sea Salt

  • 1 tsp Turmeric (ground)


Directions:

  1. Add the chicken breast, onions, carrots, celery, garlic, ginger, and broth to a pot. Bring to a boil then reduce the heat to a simmer. Cover partially and simmer for 15 to 17 minutes or until the chicken is cooked through.


  1. Remove the chicken from the broth. Shred or cut into bite-sized pieces, then add it back to the broth.


  1. Add the cauliflower rice, salt, and turmeric to the broth. Bring the mixture to a boil, then reduce the heat and simmer partially covered for two minutes or until the cauliflower is tender. Divide evenly between bowls and enjoy!
